01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours until mixture thickens to pudding consistency.
02 - Spoon chia pudding into bottom of 4 glasses or jars. Add layer of diced watermelon over pudding. Top with sprinkle of mixed berries.
03 - Repeat layering process if desired, finishing with fruit topping and granola sprinkle.
04 - Garnish each parfait with fresh mint leaves. Serve immediately or keep chilled until ready to enjoy.
