01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - Spread frozen tater tots in a single layer on the prepared baking sheet. Bake for 25 to 30 minutes, turning halfway, until golden and crispy.
03 - While the tater tots bake, cook the chopped beef bacon in a skillet over medium heat until crisp. Drain on paper towels.
04 - When tater tots are ready, sprinkle evenly with shredded cheddar cheese and cooked beef bacon. Return to the oven for 3 to 5 minutes until the cheese is melted and bubbly.
05 - Remove from oven and transfer to a serving platter. Top with spring onions, dollops of sour cream, diced tomato, and fresh herbs. Season with black pepper. Serve immediately while hot.
