01 - Preheat your oven to 170°F or set a dehydrator to 135°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat, ensuring complete coverage to prevent sticking.
02 - In a blender or food processor, combine the fruit, sweetener (if using), and lemon juice. Blend on high speed until completely smooth, scraping down the sides as needed to ensure uniform texture.
03 - Pour the fruit puree onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread it into an even layer approximately 1/8-inch thick. The key is uniform thickness for consistent drying.
04 - Place the baking sheet in the oven or dehydrator. Dry for 4-6 hours, checking after 4 hours. The fruit leather is ready when it's no longer sticky to the touch and peels away easily from the liner. It should feel smooth and tack-free.
05 - Remove from the oven and let cool completely on the baking sheet. Once cooled, carefully peel the fruit leather off the liner in one piece. Transfer to a clean cutting board.
06 - Cut the fruit leather into strips using a sharp knife or kitchen scissors. Roll each strip individually in parchment paper to prevent sticking. Store in an airtight container at room temperature for up to 1 week.
