01 - In a large mixing bowl, combine rolled oats, cocoa powder, ground flaxseed or chia seeds if using, and pinch of salt. Mix thoroughly to distribute evenly.
02 - Add peanut butter, honey or maple syrup, and vanilla extract if using. Stir until all ingredients are completely combined and mixture holds together.
03 - Fold in mini chocolate chips and chopped nuts if using until evenly distributed throughout mixture.
04 - Using clean hands or a small cookie scoop, roll mixture into balls approximately 1 inch in diameter, packing firmly to hold shape.
05 - Place energy balls on parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.
06 - Store in airtight container in refrigerator for up to 1 week, or freeze for up to 3 months for longer storage.
